This snack is high in protein and is great if you are looking for something dairy free to mix with your granola. Kids love anything layered, I find. You can add frozen or fresh fruit within layers and on top or cacao nibs and cinnamon, with banana slices and walnuts, or not. Anything goes.
The only thing you have to remember to do is soak the nuts in advance. Soaking allows for an extra creamy texture as well as provides added nutritional benefits (soaking nuts breaks down their enzyme inhibitors, allowing our bodies to better digest nuts).

cashew cream granola
• 1 c soaked cashews (for 6 hours)
• 1/4 cup lemon juice
• 1/4 cup water (optional, leave it out if you want a thick consistency)
• 1/4 cup maple syrup
Process all of the above and layer with granola, fruit and any other toppings you like.
