I love this salad dressing. It does a great job of mimicking the traditional caesar salad dressing with the use of garlic and capers, along side of lemon juice and apple cider vinegar. Sprinkle some hemp seeds on top (or not) and it’s finished. (I like to add some sliced avocado on the side.)
Of course, romaine lettuce is idea for a caesar salad. I used spinach and reds here (didn’t even think to grab romaine at the grocery store) and it tasted great. You can get away with using apple cider vinegar or lemon juice alone if you are missing one. I’ve also made this before and then discovered I didn’t have capers and it was still great.

vegan caesar dressing
1/4 cup extra virgin olive oil
• 1 tbsp apple cider vinegar
• 1 tbsp lemon juice
• garlic clove
• 1 tbsp capers, rinsed
• s + p
• hemp hearts, sprinkled on top
PURÉE oil, vinegar, lemon juice, garlic, capers and salt with a hand mixer. Add ground pepper and hemp hearts before serving. Add grilled chicken and/or sautéed bread crumb chunks for more of a meal in one.
