My kids love these avocado bowls 😍 Why do they taste better in the cups? They just do. I’m not sure this would get completely devoured if it was just sitting on their plates.
gluten free, nut free, dairy free, paleo & vegan
avocado bowls
serves 4 (but you only have two avocado bowls, so fill the bowls twice or scrape out another avocado bowl)
• 1 avocado, cubed* (slice horizontally and vertically then scoop cubes out with a spoon)
• 1/2 red or orange pepper, cubed
• approx 10 cherry tomatoes (different colour then pepper), cubed
• 3 green onions/scallions, diced
• some fresh herbs (parsley, dill or cilantro)
• fresh squeezed lemon &/or lime juice
• sea salt, opt
*tip for getting the pit out easily: once you’ve cut your avocado in half, keeping your other hand away from the pit, get a sharp knife and quickly hit the pit so the knife gets stuck; then pick up the half and using the stuck knife, twist the pit till it pops/slides out
Mix all ingredients together & scoop into avocado bowls & serve. Enjoy
