With non-stop rumbling thunder around my parents island all morning, my 11 year old daughter and I decided it was a cookie day. A chocolate chip cookie day. Most of my recipes call for rolled oats but we didn’t have any on the island, which was perfect because I’ve been wanting to experiment with a plain chocolate chip cookie recipe for a while. So the creating began. We debated do we use an egg or the ground flax seed which often works well in cookie recipes, especially with gluten free flour (which can sometimes crumble if there’s nothing to help it bind like an egg, ground flax or nut butter). I thought of all my vegan friends so went with the ground flax in the end.

Cookies are always good warm out of the oven, though I find with many gluten free recipes they are better after they’ve cooled. And today, I found the 4th and 5th ones I ate (I know, glutton) hours later were the best ones.

chocolate chip cottage cookies

350º oven, makes 12 med cookies

• 1 cup sorghum flour
• 1 cup brown rice flour 
• 1/2 tsp baking soda
• 1/4 tsp salt
• 6 tbsp coconut oil (melted if not soft)
• 1/4 honey
• 1/4 cup water
• 2 tsp flaxseed, ground
• 1/2 tsp vanilla extract
• 1/3-1/2 c bittersweet chocolate chips

Mix and set aside to thicken:
• 1/4 cup water with 2 tsp ground flaxseed

Mix dry ingredients in a large bowl:
• gluten free flours, baking soda and salt 

Mix wet ingredients in a separate bowl:
• coconut oil (melt on low on stove top if not soft), honey and vanilla

Add the flax mixture (also called flax egg) to the wet ingredients and mix.

Using a silicone spatula, scrape the wet ingredients into the dry ingredients bowl.

Add the chocolate chips and a few more stirs. 

Roll into balls and flatten into desired cookie shapes on cookie sheet. 

Place in center rack of oven.

Cook for 12 minutes.

Allow to cool on cookie rack before eating.

They’re a bit stick to the roof of your mouth so best to savour every bite slowly and in silence (hence me sneaking off to have cookie #4 & #5)
