Sometimes it just takes a little reminder to prepare food a little differently than you are used to. We do poached eggs on toast, often, but this morning, I decided to change it up. You can make this recipe with a fried egg or a poached egg.
And it’s always great to have happy kids with full bellies. My 10 year old son took one bite and stated:
“This is my new favourite food – this is the best!”
gluten free, dairy free
avocado & egg on toast
makes 1 serving
• large egg
• 1 piece of bread (I used O’Doughs gluten free)
• avocado
• extra virgin olive oil
• sea salt
• pea shoots, optional
COOK THE EGG AND TOAST
• put a pan on medium heat
• toast the bread and brush toast with extra virgin olive oil and sea salt
• fried egg: spray avocado oil before cracking your egg in the pan; flip the egg after 1-2 minutes, cook for a minute longer, depending how runny you want the yolk
OR
• poached egg: fill pan with water and bring to a solid simmer (with tiny bubbles rising), add splash of vinegar to help egg white from separating
• crack an egg into the water and spoon water over top to help the yolk cook; cook for 2-3 minutes, depending how runny you want the yolk; remove with slotted spoon
AVOCADO
• cut in half and make 3 or 4 slices with a knife, lengthwise; use a spoon to remove the slices and lay 3-4 avocado slices on toast
• cover with fried or poached egg
• garnish with a few pea shoots if you have any
Done! Easy and really good.
