These are delicious. A really easy way to start your kids’ day off with smiles. Make them a day ahead so you can simply bake the next morning. They can even be frozen if you need to make them well in advance, and simply thaw in fridge overnight, before baking. On Valentine’s day I shape them into hearts (see below for details & photos). I have used gluten free flour with success (Bob Red Mills) but spelt works best. I prefer to use currants over raisins as they are smaller, but raisins will work fine.

425º oven, bake for 12 minutes

• 1 3/4 c light spelt flour
• 2 tsp baking powder
• 1 tsp coconut palm sugar
• 1/2 tsp baking soda
• 1/2 tsp salt
• 6 tbsp coconut oil, not melted
• 1/2 cup non dairy milk
• 1 tbsp lemon juice

CINNAMON CURRANT WALNUT SPREAD
• 1/3 cup walnuts, diced
• 1/3 cup coconut palm sugar
• 1/3 cup currants (or raisins)
• 2 tsp cinnamon 
• 1/4 coconut oil  

MIX dry ingredients.

ADD coconut oil to dry ingredients. I like to use a fork to work the coconut oil into the flour mixture.

ADD the milk and combine with danish whisk. (If dough is wet, either put in fridge to chill &/or sprinkle extra flour on dough and rolling pin.)

ROLL  dough into wide rectangle.

SPREAD 1 tbsp coconut oil on top off dough with back of spoon before adding cinnamon currant walnut mixture, spreading it out with hands while gently pressing down so the pieces stick into the dough.

ROLL tightly from the smaller edge, to the other end. Slice.

FOR VALENTINES HEARTS
ROLL tightly from the smaller edge towards the middle. Stop at the middle. Repeat from opposite edge. 

CUT as thick as you want with a sharp knife.

PLACE each piece, upright, on

cookie sheet. If your pieces flattened slightly when you cut it you may need to press the pieces up to form more a round shape. Then use your fingers to form a point at the bottom – the bottom of the heart. 

BAKE for 12 minutes, until light brown, keeping your eye on them around 10 minutes, depending on pan and oven you are using, times can vary.

Allow to cool before serving. Enjoy!
