My four ingredient dairy free chocolate ice cream is as delicious as it is easy. I like a more mild chocolate flavour so I use only 1/4 cup of cacao powder in my recipe – feel free to increase the amount for all of you chocoholics out there. There is also flexibility in the milk you use. For this recipe, I used 2 cans off coconut milk (never lite — as that has added water, always use regular coconut milk). If you do not like the coconut flavour you can use one can and the balance can be any non-dairy milk (keep in mind the ice cream won’t be as creamy as when you use 2 cans). Almond, cashew or oat milks are good substitutions. The milk should equal approx 3 cups total.

dairy free chocolate ice cream
serves 4-6

• 2 cans coconut milk (full fat, never ‘lite’ as it has added water)
• 1/2 cup amber maple syrup
• 1/4 cup cacao powder
• 1 tsp vanilla extract

MIX above ingredients with hand mixer for high speed blender. 

POUR into ice cream maker and follow instructions (approx 25 minutes is the usual time it takes).

Sometimes I put the ice cream into a air tight container and into the freezer for an hour or two to further solidify — depends on how soft you like your ice cream.
