Oh, my… I added lemon zest to these for the first time. Aside of coconut butter’s (made from the meat of the coconut) healthy fats that help you feel full, boost your metabolism and immune system, these healthy snacks give an extra nutritional punch from hemp and chia seeds, giving you a healthy dose of omega 3s, protein, fibre, brain power and energy.
raw lemon coconut macaroon
makes 10-12, 1.5” balls
Melt on low heat, stirring:
• 1/2 c coconut butter
Remove from heat and add:
• grated rind of 1/2 large lemon
• 3/4 c + 2 tbsp shredded coconut
• 1 tbsp hemp seed
• 3 tbsp maple syrup
• 1 tbsp white chia seeds (optional)
Stir to combine. Scoop a spoonful and form into balls with hands. Press balls down on plate to flatten bottom (this also helps balls stick together instead of crumble) while using fingers to maintain round shape on top/sides. You can also use a small ice cream scooper – the professional kind that have the slider that helps deposit the food.
Place in fridge for at least 1 hour. Store in fridge. Yum.
