My kids wanted a vanilla ice cream without a strong coconut flavour. So I used half coconut milk and half non-dairy milk, with a little extra vanilla flavour — vanilla extract and vanilla powder. If you don’t have any powder just add a touch more vanilla extract.

vanilla bean ice cream
serves 4-6
• 1 can coconut milk (empty into pyrex measuring cup)
• unsweetened oat milk (top up to total 3 cups)
• 1/3 cup amber maple syrup
• 2 tsp vanilla extract
• 1/2 tsp vanilla powder (to add extra vanilla kick, plus brown specks are pretty)
MIX above ingredients with hand mixer or high speed blender.
POUR into ice cream maker and follow instructions (approx 25 minutes is the usual time it takes).
Sometimes I put the ice cream into a air tight container and into the freezer for an hour or two to further solidify — depends on how soft or hard you like your ice cream.
