It has been ages since I’ve made this healthy snack. I’m reminded how easy they are and what a quick fix of sweet and energy to get you through till the next meal. They are great for kids’ snacks and wrapping them this way makes you feel like you’re eating something a little extra special.
There are a million variations for this recipe but I kept this one simple. I was craving that old school choc peanut butter taste (but I always opt for healthier almond or cashew butter and since I felt a bit sugar overdosed I chose whole cacao beans instead of chocolate). All good. Still sweet & tasty, tons of fiber, anti-oxidants and protein.

almond butter chocolate raw food bar
In a food processor blend:
• 1 lb (which was approx 27) medjool dates
• 1/3 cup cashews or almonds
• 1/2 cup almond butter
• 1/4 cup cacao beans (natural dark choc chips or chunks would work too)
Line a square or rectangular container with parchment paper. Press mixture into container, flattening the top with a spatula. Stick in the fridge to solidify for an hour or two (or longer). Remove and slice into bars. Wrap with pieces of parchment paper and tie with Raffia or string. Store in fridge in an air tight container, for up to two weeks, but they won’t last that long.
