This is a quick and easy salad that goes well with anything. Getting a salad like this right all depends on getting the quinoa right – fluffy and light, not mushy and clumpy. All of the other ingredients can be prepared while the quinoa boils so don’t be discouraged by having to involve cooking on the stovetop. It’s actually easier then cutting and washing and drying lettuce! I used a mixed quinoa (red & white) which adds extra colour.
mango herb quinoa salad
• boil 1 cup quinoa in 2 cup salted water for 15 min just below med heat, lid slightly off
• remove from heat and let sit, covered, for 5 minutes
• spread quinoa on large platter or baking sheet to cool to prevent further cooking
• chop lots of mango (at least 1 large) and fresh herbs (I used basil, mint and chives)
• cube a red pepper
• dressing was apple cider vinegar, touch of dijon & maple syrup, olive oil ❤️
