Tis the season for popsicles. There are sooooo many easy recipes so I thought I’d start with one of the most basic ones. The one key ingredient you need on hand is watermelon. If you’ve got that then you can wing the rest.
• purée watermelon* in hand mixer or blender
• cut up fruit – mango chunks, kiwi slices, strawberries, peaches, whatever you have on hand
• any small frozen berries to add also work well – blueberries, raspberries, cranberries (my kids love eating these frozen?!)
(*organic unsweetened juice or coconut water can be substituted)
Start filling your popsicle moulds with fruit – I like to stick a kiwi slice to the side (because it looks pretty when it’s finished), then drop in some blueberries and other chunks of fruit.
Fill the remainder of the mould with the watermelon purée. Done.
